What is honey?

Made from the nectar of flowers, combined with the enzyme secreted by honey bees and then concentrated by reducing the moisture in the honeycomb cells.

The scientific formula:
Sucrose (which is the nectar) + Invertase (the bee enzyme) = Glucose (honey) + Fructose

Sugar contain 50% fructose and 50% glucose. The sugar that is found in fruits is broken down easily leading to flow of blood glucose. The glucose that is not used by the body right away gets stored in the form of fat.

Honey is also made of sugar, but it contains 30% glucose and less than 40% fructose and about 20 other type of sugar mix, which are complex and dextrin which is a type of starchy fibre. This means that the body takes more energy to break it down to glucose as a result of which you end accumulating less calories from it.

Does honey become bad, if kept for longer period?

Honey is unique with organic compounds that constitute perfect storm of characteristics against spoilage.

Most of the part of honey is supersaturated, the rest is saturated sugar. Sugar is hygroscopic which means that it attracts water. The bacteria and other micro- organisms that comes in contact with this solution dehydrate and die.

The supersaturation of sugar prevents the growth of yeast and other fungal organisms. Its pH is 3.26 to 4.48 which is a strong killing instrument for bacteria.

This is not all, bees prepare honey by means of an enzyme known as glucose oxidase responsible for modifying the sugar into gluconic acid and hydrogen peroxide.

An important note: Never keep a jar of honey open. The supersaturated solution will absorb the moisture present in the air and the solution will become weaker, thus losing the anti- bacterial properties.

Who should avoid eating raw honey?

Honey sometimes contain Clostridium botulinum, the bacteria which is responsible for botulism.

Why infants can't eat raw honey

Adults don’t get sick from this but infants do. Their intestinal tract adulterates the honey without digesting it and immediately they get sick from it.

Who should avoid bee pollen

Even people who have pollen allergies, bee pollen can cause serious issues. Bee pollen is also not safe for pregnant women who are breast- feeding their children.

Is too much honey bad?

Honey is amazingly benefit for the digestive system and keeps you healthy. However, if you are eating too much of honey, it will have an adverse effective on your digestive system. You are likely to suffer from stomach cramping, constipation, bloating and diarrhoea.
